1. Potato Pancakes (Kartoffelpuffer)
Potato pancakes, or Kartoffelpuffer, are a popular German dish. They are made by mashing potatoes and forming them into thin pancakes. The pancakes are then fried in oil until golden brown and served with applesauce and sour cream. They make a delicious side dish or snack and can be served with a variety of meats, vegetables, and sauces.Ingredients:
- 4 potatoes, peeled and grated
- 1 onion, grated
- 2 eggs
- 2 tablespoons all-purpose flour
- Salt and pepper, to taste
- Oil for frying
Instructions:
- In a large bowl, combine the grated potatoes and onion.
- Add the eggs, flour, salt and pepper, and mix until combined.
- Heat a large skillet over medium heat and add enough oil to coat the bottom of the pan.
- Drop spoonfuls of the potato mixture into the pan and flatten with a spatula.
- Fry the pancakes for 3-4 minutes on each side, until golden brown.
- Remove the pancakes from the pan and place on a paper towel-lined plate to drain off any excess oil.
- Serve the pancakes with applesauce and sour cream.
