Instructions
To start, begin by preparing the giblets. Rinse the giblets under cold running water and then pat them dry with paper towels. Trim off any excess fat and discard. Place the giblets in a medium-sized saucepan and cover them with cold water. Bring the water to a simmer over medium heat and cook the giblets for about 30 minutes, or until they are tender. Remove the giblets from the water and set aside. In a large saucepan, melt the butter over medium heat. Add the diced onions and cook for about 5 minutes, or until the onions are soft and lightly browned. Add the garlic and cook for another minute. Stir in the chicken broth, followed by the flour. Whisk the mixture until it is well blended and there are no lumps. Simmer the mixture for about 5 minutes, stirring frequently. Turn the heat to low and add the cooked giblets, thyme, sage, Worcestershire sauce, and parsley. Simmer the gravy for another 10 minutes, stirring occasionally.
