1. Masala Dosa
Masala dosa is a classic South Indian dish that’s popular all over India. It’s made with a fermented rice and lentil batter, which is spread on a hot griddle and filled with a flavorful potato masala. The dosa is then rolled up and served with sambar and chutney.Ingredients:
- 1 cup rice
- 1 cup split urad dal
- 1/2 teaspoon fenugreek seeds
- 2 medium potatoes, boiled and mashed
- 1 onion, finely chopped
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 2 green chillies, chopped
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- 2 tablespoons coriander leaves, chopped
- Salt to taste
- Oil for cooking
Instructions:
- Soak the rice and dal in enough water for 6-8 hours.
- Drain the water and grind the soaked ingredients into a smooth paste using a blender.
- Transfer the batter into a bowl and add a pinch of salt and fenugreek seeds. Mix well and leave it to ferment for 8-10 hours in a warm place.
- Once the batter has fermented, add more salt to taste.
- Heat a non-stick pan and spread the batter thinly on the pan. Cover and cook for 1-2 minutes.
- In a separate pan, heat some oil and add the mustard seeds, cumin seeds and green chillies. Fry for a few seconds.
- Add the potatoes, onion, turmeric powder, garam masala and salt to taste. Fry until the onion is golden brown.
- Spread the potato masala onto the dosa and roll it up. Serve hot with sambar and chutney.
