1. Masala Dosa

Ingredients:

  • 1 cup rice
  • 1 cup split urad dal
  • 1/2 teaspoon fenugreek seeds
  • 2 medium potatoes, boiled and mashed
  • 1 onion, finely chopped
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 2 green chillies, chopped
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 2 tablespoons coriander leaves, chopped
  • Salt to taste
  • Oil for cooking

Instructions:

  1. Soak the rice and dal in enough water for 6-8 hours.
  2. Drain the water and grind the soaked ingredients into a smooth paste using a blender.
  3. Transfer the batter into a bowl and add a pinch of salt and fenugreek seeds. Mix well and leave it to ferment for 8-10 hours in a warm place.
  4. Once the batter has fermented, add more salt to taste.
  5. Heat a non-stick pan and spread the batter thinly on the pan. Cover and cook for 1-2 minutes.
  6. In a separate pan, heat some oil and add the mustard seeds, cumin seeds and green chillies. Fry for a few seconds.
  7. Add the potatoes, onion, turmeric powder, garam masala and salt to taste. Fry until the onion is golden brown.
  8. Spread the potato masala onto the dosa and roll it up. Serve hot with sambar and chutney.
