Ingredients
- 4 swordfish steaks (6 ounces each)
- 1/4 cup olive oil
- 2 tablespoons freshly squeezed lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 2 tablespoons chopped fresh parsley
- 2 tablespoons butter, melted
Instructions
1. In a medium bowl, whisk together the olive oil, lemon juice, garlic, oregano, salt, and pepper. Place the swordfish steaks in a shallow dish and pour the marinade over the steaks. Cover and refrigerate for at least 30 minutes or up to 2 hours.
2. Preheat the grill to medium-high heat. Oil the grate with vegetable oil. Remove the steaks from the marinade and discard the marinade. Grill the swordfish steaks for 4 minutes per side, or until the fish is cooked through and flakes easily with a fork.
3. Transfer the steaks to a serving platter and top with the melted butter and chopped parsley. Serve immediately.
