Bison Chili
Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 pound of bison ground
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- 1/4 teaspoon cayenne pepper (optional)
- 1 28-ounce can diced tomatoes
- 1 15-ounce can of kidney beans, drained and rinsed
- 1 15-ounce can of black beans, drained and rinsed
- 1/2 cup of water
- Salt and pepper, to taste
- Optional toppings: shredded cheese, sour cream, diced avocado, diced red onion
Instructions
- Heat the olive oil in a large pot over medium-high heat. Add the onion and garlic and cook for about 5 minutes, or until the onion is softened and fragrant.
- Add the bison ground to the pot and cook until it is browned, about 5-7 minutes.
- Add the chili powder, cumin, oregano, paprika, and cayenne pepper (if using) and stir to combine.
- Add the diced tomatoes, kidney beans, black beans, and water to the pot and stir to combine.
- Bring the mixture to a boil, reduce the heat to low and simmer for 20-30 minutes, or until the chili has thickened.
- Season with salt and pepper, to taste.
- Serve with your favorite toppings and enjoy!
