Bison Chili

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 pound of bison ground
  • 2 tablespoons chili powder

  • 1 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 28-ounce can diced tomatoes
  • 1 15-ounce can of kidney beans, drained and rinsed
  • 1 15-ounce can of black beans, drained and rinsed
  • 1/2 cup of water
  • Salt and pepper, to taste

Instructions

  1. Heat the olive oil in a large pot over medium-high heat. Add the onion and garlic and cook for about 5 minutes, or until the onion is softened and fragrant.
  2. Add the bison ground to the pot and cook until it is browned, about 5-7 minutes.
  3. Add the chili powder, cumin, oregano, paprika, and cayenne pepper (if using) and stir to combine.
  4. Add the diced tomatoes, kidney beans, black beans, and water to the pot and stir to combine.
