Instructions

1. Preheat oven to 375 degrees F. 2. Heat olive oil in a large skillet over medium heat. Add onion and garlic and cook until onion is translucent, about 5 minutes. 3. Add carrots, celery, zucchini, spinach, oregano, basil, thyme, salt, and pepper to the skillet. Cook for 5 minutes, stirring occasionally. 4. Add diced tomatoes and tomato sauce to the skillet and stir to combine. Cook for 10 minutes, stirring occasionally. 5. Meanwhile, cook lasagna noodles according to package instructions. Drain noodles and set aside. 6. To assemble the lasagna, spread 1/2 cup of the vegetable sauce in the bottom of a 9x13-inch baking dish. Top with 3 lasagna noodles. Spread 1/2 cup of ricotta cheese over the noodles, followed by 1/2 cup of the vegetable sauce. Sprinkle with 1/4 cup of Parmesan cheese and 1/4 cup of mozzarella cheese. 7. Repeat layering with 3 noodles, 1/2 cup ricotta cheese, 1/2 cup vegetable sauce, and 1/4 cup each of Parmesan and mozzarella cheese. Top with remaining 3 noodles and remaining vegetable sauce. Sprinkle remaining Parmesan and mozzarella cheese over the top. 8. Cover lasagna with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes, or until cheese is golden brown and bubbly. 9. Let lasagna cool for 10 minutes before serving.
