Ingredients

  • 4 poblano peppers
  • 1 cup of shredded cheese (cheddar, Mexican blend or your favorite type)
  • 1 cup of cooked rice
  • 1/2 cup of diced onion
  • 1/2 cup of diced bell peppers
  • 1/2 cup of diced tomatoes
  • 1/4 cup of chopped cilantro
  • 1 teaspoon of minced garlic
  • 1 teaspoon of cumin
  • 1 teaspoon of chili powder
  • 1/2 teaspoon of oregano
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/2 cup of all-purpose flour
  • 1 cup of vegetable oil

Instructions

Step 1: Preheat Oven

Preheat your oven to 400 degrees Fahrenheit. This will ensure that the peppers are cooked through before stuffing.

Step 2: Prep the Peppers

Slice each pepper in half lengthwise, and remove the seeds and membranes. Place the peppers onto a baking sheet, and bake for 15-20 minutes. When the peppers are finished baking, remove from the oven and set aside.

Step 3: Prepare the Stuffing

In a large bowl, combine the cooked rice, cheese, onion, bell pepper, tomatoes, cilantro, garlic, cumin, chili powder, oregano, salt, and pepper. Stir the ingredients together until evenly combined.

Step 4: Stuff the Peppers

Take each pepper, and stuff each half with the filling. Make sure the filling is evenly distributed and that the peppers are filled to the brim. Place the stuffed peppers onto a baking sheet.

Step 5: Fry the Peppers

In a large skillet or pot, heat up the vegetable oil over medium heat. While the oil is heating, spread the flour onto a plate. Take each stuffed pepper, and dredge in the flour, making sure to coat each pepper evenly. When the oil is hot, place the peppers into the pan, and fry for 3-4 minutes per side, or until golden brown.

Step 6: Serve

Remove the peppers from the oil, and place onto a plate lined with paper towels. Serve warm with your favorite Mexican toppings, such as salsa, sour cream, or guacamole. Enjoy!
